Want a morning snack you can grab on your way out the door? Or maybe sit down with guilt free muffin and a glass of milk before you go to bed? No matter what time it is, dark chocolate and cherries are a match made in heaven. This recipe is also relatively low in calories and tries to use healthy ingredients. So don’t worry about your bikini body when you indulge in this muffin.

Ingredients:

1 1/2 cup flour

2 tsp baking powder

1 tsp ground cinnamon

3/4 cup white sugar

1/3 cup unsweetened apple sauce

1/3 cup non-fat milk

2 egg whites

1 tsp vanilla extract

1/4 cup mini semi-sweet chocolate chips

1 cup chopped fresh cherries

Method:

Preheat the oven to 400 degrees. Coat muffin pan with nonstick cooking spray. In a medium bowl sift flour, baking powder, and cinnamon. Mix well.

In a large bowl sift sugar, and add wet ingredients one at a time. Mix until all sugar is dissolved and everything is fully incorporated.

Add the dry ingredients to the large bowl of wet ingredients. Use a beater to combine into one mixture. Fold in cherries and chocolate chips.

Use a tablespoon to evenly distribute batter to each muffin.  Double check to make sure cherries and chocolate chips are spread throughout, and the batter is 2/3 full in each tin leaving room for the muffins to rise.

Bake for approximately 15 minutes, it may take a little longer depending on what size your muffins are and how well you want them cooked. Take out of the oven and let cool for ten minutes.
