Sandwiches are brilliant. Who would have thought that putting two slices of bread together and loading it with fillings would be such a quick and easy meal? So if you’re bored of the classic cheese and ham or egg salad, why not try some of these great sandwich combinations next time you’re feeling peckish.
(If you’re not too keen on bread you could also swap it for a wrap, pitta or jacket potato).
Tuna crunch melt — (tuna, mayonnaise, red onion, peppers and melted cheese)
Empty a tin of tuna in a bowl and add a large dollop of mayonnaise. Finely chop the onion and peppers and stir in, adding some salt and pepper to taste. Load the mix onto the bread/wrap/jacket with a generous sprinkle of cheese and toast until melted.
Grill a chicken breast and two slices of bacon until crispy. Chop the chicken and avocado into thin slices and arrange on the bread/wrap with the bacon. Add lashings of mayonnaise for extra taste and some salad if desired.
Veggie king — (grilled red pepper, red onion, squash and aubergine with goat cheese and a lemon and garlic mayo)
In a bowl mix the mayo, chopped garlic and a dash of lemon juice and set aside. Chop the vegetables and spread it on a grill pan, brushing with olive oil, salt and pepper. Cook for about three mins each on both sides. Spread the bread/wrap with mayo and put thin slices of goat’s cheese on top. Put the bread (cheese side up) under the grill until the cheese is melted. You can then load the veggie filling and enjoy as an open or closed sandwich.
Cheese-steak — (fried steak with green pepper and onion with melted mozzarella and garlic mayo)
Combine the mayonnaise and minced garlic and set aside. In a medium/high heated pan, fry the steak in olive oil and add salt and pepper to taste. Stir in the pepper and onion until tender but ensure that it doesn’t turn brown. Add the mayo generously on each side of the bread/wrap and load it with steak filling. Add strips of mozzarella and grill until melted.
The Italian cheese and tomato — (Buffalo mozzarella, sun dried tomatoes, pesto and basil)
This sandwich is really tasty on focaccia or ciabatta bread. Spread the pesto onto both sides of the bread with the sundried tomatoes on top. Slice the mozzarella and place onto the tomatoes, with the basil leaves on top. You can also use iceberg lettuce if you like extra crunch.
